Vacuum Tumbler Systems Used to Speed and Improve Pre-Marinating Meats

Problem

Meat and poultry plants use vacuum to improve marinating chicken, bacon, pork and other pre-marinated meats. Central vacuum systems and rotary vane vacuum pumps have been widely used to supply vacuum to tumblers. Marinade carryover and other debris shortens rotary vane pumps life. Service life for an oil sealed rotary vane vacuum pump can be as little as two months. With regular maintenance a rotary vane pump may last two years supplying vacuum to a tumbler.

Regular maintenance includes keeping the inlet separator clean and frequent oil changes and lube filter change-outs. Because the pump is in a cold room and installed with the tumbler maintenance is difficult.

Solution

A Condit Tumbler Vacuum System installed at a poultry plant Since 1999, Condit Company has been offering a Tumbler Vacuum System that replaces rotary vane pumps. Condit's Tumbler Vacuum Systems have been in service with minimal maintenance in some poultry plants for more than seven years. Most OEMs today use a solution similar to Condit's Tumbler Vacuum System instead of rotary vane pumps.

Condit's Tumbler Vacuum Systems feature liquid ring vacuum pumps. The pumps have one moving part, an impeller keyed to a shaft. Liquid ring vacuum pumps create vacuum by sealing with a ring of water. A small fraction of the water used for the liquid ring seal is carried down the drain to both wash any accumulated carryover solids through the pump and to help keep the pump cool to the touch. Product and marinade carryover do not damage the pump.

The unit is installed adjacent to the tumbler in the cold room or sometimes in a close equipment room and can be furnished with casters.

What Comes in a Tumbler Vacuum System

Each Tumbler Vacuum System includes:
  • One Sihi LEM/LEH Series vacuum pump with TEFC motor
  • Inlet check valve
  • Inlet vacuum gauge with gauge valve
  • XBa discharge separator (non-code) partial recirculation line with control valve
  • Service liquid line supply with shut-off valve “Y” type strainer
  • Solenoid valve (NEMA 4, 1/60/110 volt) flow control valve
  • Compound gauge with gauge valve
  • Bronze vacuum relief valve
  • Threaded piping and fittings for above components
  • Baseplate for above components
System is complete with anti-cavitation feature plumbed with throttling valve. System will be factory assembled and tested. System comes complete with 460 VAC motor starter panel, full voltage non-reversing starter, NEMA 4 enclosure start/stop push buttons utilizing separate central contacts, separate reset button, overload relay protection, and control transformer with control circuit fuse. The panel will be mounted and wired to the system.
